TUNA

There are mainly five kinds of tuna in Japanese sushi restaurant.

bluefin tuna

This is the king of tuna that is called Hon Maguro or Kuro Maguro in Japan.

You could eat Bluefin Tuna in only high class sushi restaurant. Bluefin Tuna is the most tasty and expensive. One otoro of Bluefin might be over 3000yen.

bigeye tuna

This is called Mebachi Magro in Japan. Consumption of Bigeye is the highest in Japan.

Albacore Tuna
Albacore Tuna
This is called Binchou Maguro in Japan. Albacore is popular in rotating sushi restaurant because it’s very reasonable and tasty. Price is about between 100yen and 200yen for two in one plate.

The portion of tuna

Almost middle class sushi restaurants could serve Southern Bluefin, Bigeye, and Yellowfin.

However almost their names aren’t written in menu. It’s only portion of tuna like Akami, Chutoro and Otoro.

This fish is called by different names as they grow larger.

As follow Shinko (under 5cm), Kohada (7cm to 10cm), Nakazumi (about 13cm), Konoshiro (over 15cm).

You can this fish everywhere in Tokyo. It’s not rare fish. However young one is more expensive.

So Shinko is very expensive. Sometimes 1kg of Shinko is about $400 to $500 in the market.

Sushi chef is tasted when they cook Sushi of Kohada. Because of this fish is very small and enhanced taste by depending on how to use salt and vinegar. It can go right or wrong. So it’s very difficult to cook this Sushi.

That’s why Sushi of Kohada is called Edo no Hana. Edo means ancient name of Tokyo. Hana means flower. In other words this Sushi is Star.

 

Aji

Because of Aji is very cheap and tasty. Aji has specific odor. So, grilled, boiled and dried one is so tasty except Sushi.

You can eat Sushi of Aji everywhere at reasonable price. However, from April to August is the best because of Aji has plenty of fat.

Welsh onions, grated ginger and grated garlic on the Sushi of Aji are the best of how to eat it.

Saba is one of the most popular fishes in Japan. There are many tasty dishes of Saba. Grilled with salt, Boiled with soy sauce, sake and sugar, Sashimi and so on. However Shimesaba is the best one among them.

Shimesaba is Japanese traditional cooking methods from old days. Shimesaba means soak Saba in vinegar. Because Saba is spoil easily. Of course you can eat raw Saba if they are fresh.

Whoever I would like to recommend Shimesaba. Because Saba goes well with vinegar And Sushi of Shimesaba goes well with Sake very much.

Especially October to March is the best because of Saba has plenty of fat.

 

Suzuki : Japanese sea perch

This fish have the same name with Japanese vehicle maker Suzuki. As its name suggests they have strong power. So fishermen fun-loving to fish for Suzuki.

This fish is called by different names as they grow larger.
As follow Coppa (young fish), Seigo (limit of 18cm), Fukko (limit of 60cm), Suzuki (over 60cm).

Suzuki’s white meat is very elegant and plain taste with just a little bit unique flavor. It’s so good. Especially summer season is the best because Suzuki has plenty of fat.

Katuo is one of the most important fish for Japanese. Because Japanese food is usually used soup stock extracted from dried Katuo. It’s called Katuobushi.

Katuo has a lot of amino acid. Especially inosine acid become soup stock. So Sushi of Katuo is tasty too. Especially Katuo no tataki is the best.

Katuo no tataki that is roasted only surface of Katuo because it can enhance it’s taste. This is traditional cooking method in Japan.

You have to eat Sushi of Katuo if you come to Japan in spring season because it’s the best for Katuo.

Especially Sushi of Iwashi with ginger and small green onion in summer to autumn season is the best. These spices can enhance unique taste of Iwashi. It’s so good.

Not only sushi but also grilled sanma is tasty. Anyways, you should eat sanma in autumn season. Sanma is the leading part of autumn in Japan.

However the sushi that whole this fish is used is very beautiful. Different crafted is performed by depending on sushi chef. So, you could enjoy not only eating but also seeing sushi of Sayuri.

This fish’s origin of name has two different theories.

One is this.
Tachiuo’s ‘tachi’ means sword. ‘Uo’ means fish. This fish’s figure is like samurai sword. That’s why they are called Tachiuo.

Another is this.
Tachiuo’s ‘tachi’ means stand up in Japanese. This fish swim while standing in the sea. So they are called Tachiuo.

Tachiuo is very popular in Japanese because it’s very tasty. Tachiuo have high quality white meat and oil. And then they are tasty in all season. Of course sushi is the best in all dishes of Tachiuo.
